drewbear: (With a twist...)

On a note totally unrelated to the previous post, today was finally cold enough that I had my first cup of hot tea for the season. A green tea with spearmint blend from Mighty Leaf Teas, unarguably my favorite tea company.

I'm also have some frozen chicken tenderloins in the fridge thawing and I'm going to cook them up either tomorrow evening, Friday or Saturday, depending on when they thaw out completely.

Thinking of food and drink, what are some of your favorite make-em-yourself meals? I'd like to hear about anything from as simple as a sandwich and soda to a home-cooked 7 course meal (though I'm likely to be quite intimidated in the later case).

My spicy spaghetti, of which I would kill to have a bowl of now. And my ground turkey shepherds pie which is really good on a cold day but takes a bit of work.

Oh, that shepherd's pie sounds good. Can I get the recipe?

Sure but it's more a method then a recipe.

Peel and chop up four to five good size potatoes, russets work well for this, put in cold water and bring up to a boil, cook until tender. Add salt, pepper, bit of milk and mash, set aside.

In another pan I use one medium size onion and a couple of cloves of garlic chopped and cooked until clear in olive oil, I brown a package of ground turkey (sometimes it's a pound sometimes it's 1.5 pounds)in with the onions/garlic. Add a out a half of cup of stock and let it reduce down a bit.

You can add whatever spices you like but I use a dash of Worchester Sauce, kosher salt, ground pepper, cayenne pepper and basil.

If you're frying pan is large enough and oven safe you can finish the rest of the pie there but if not you need to move this to an oven safe dish, it's a lot so think something like a 13 by 9 inch pan?

When you have the meat mixture in whatever pan you are going to use mix in either a small cup of sour cream or a can of cream of mushroom soup, I like the sour cream but the cream soups of any flavor will work in a pitch.

Add a can of drained whole kernel corn in a layer over the meat mixture. (Some people prefer green peas but I don't think they stand up well.) Spoon the mashed potatoes over that and distribute evenly.

Put a layer of shredded cheese, I use sharp cheddar, about two cups or so over the top.

Put it in a 350 degree oven for 20 to 25 minutes or until hot and bubbly.

Enjoy

(This is not a good diet food unless you use reduced fat sour cream and cheese and even then, oy. But my kids love it on cold days.)
