Cooked myself an all-natural-ingredients lunch and 'twas quite tasty :-)
Ingredients:
1/2 large yellow onion
1/2 red bell pepper
1/2 - 2/3 tsp garlic powder (to taste)
extra virgin olive oil
1/4 cup milk
1/4 cup butter or margarine (room temperature)
1 full handful shredded cheese (cheddar or "taco cheese" blends are well suited)
8 oz. dry thin spaghetti
6 cups water
Bring water to boil, snap half the spaghetti in half and put all spaghetti into pot to boil for 10-12 minutes (or to desired limpness).
Dice onion and pepper into chunks about 1/2" square. Sauté on high heat in a large saucepan with a generous amount of extra-virgin olive oil, sprinkling garlic powder on top. When garlic has "chunked"/caramelized and onion is just beginning to caramelize, remove from heat and put to side. Make sure to scrape bottom of pan thoroughly to make sure none of the garlic has stuck.
When spaghetti is done, drain and return to pot. Pour in milk, margarine and cheese and stir until thoroughly combined and coating spaghetti. Pour sautéed vegetables and any remaining olive oil from pan into pot and stir into spaghetti.
Immediately serve.
Makes 2-4 servings depending on portion size.
